Ratatouille Nicoise


Traditional french recipe for ratatouile, without oven.

To finish the left overs if any, reheat them in a pan and break eggs into it and cook. Voila !


Ingredients :

3 Tomatoes

2 Bell Peppers

2 Eggplants

3 Zucchini

3 middle sized onions

1 garlic clove

1 Bouquet Garni

Olive oil, salt, pepper


Instructions:

Peel and remove seeds from tomatoes then dice them

Peel zuchini and eggplants then slice them

Remove seeds from bell peppers and slice them

Peel then mince onions

In a large frying pan, heat up olive oil then saute the onions until golden.

Add tomatoes and let them cook together for 3-4 mins, whisking with a wooden spoon. You should obtain some sort of puree.

Add the garlic and season with salt and pepper.

Add zuchini, eggplants and bell peppers.

Add bouquet garni

Cover the pan with a top and let simmer for 30 mins.


Ready to serve hot or cold !
