Tarte Anna - no crust apple pie


This is a simplified apple pie that is very easy to make, bake and eat.

It doesn't require any crust at all and has a strong fruit flavor.

It can also be done with peaches or pears instead of apples.

I am told it's a family recipe, so don't waste time looking for the name on the interwebs !

As it's an old recipe, the quantities are more or less improvised. Don't hesitate to use big spoon fulls of flour, sugar and yeast.


Ingredients - serves 4 to 6

3 apples, any kind, I usually like Fuji apple

2 eggs

pinch of salt

4 tbsp flour

4 tbsp sugar

125g butter, melted

"half small bag of yeast" ... I used a tea spoon


Instructions

Preheat oven at 150°C (thermostat 4-5)

Peel the apples and remove the central part with the seeds.

Cut one of the apples in 4 slices, so that it keeps the whole in the middle. It will be used for decoration on top.

Cut the other two apples in small bits, maybe 1㎝ cubes.

In a big bowl, mix the eggs, sugar, salt, flour and yeast.

Add in the melted butter and the apples and mix well again.

Spread a bit of butter and a pinch of flour over a round shaped cake pan, to prevent sticking.

Pour the content of the bowl in the cake pan and place the apple slices on top.

Bake at 150°C for 50 mins

Transfer the pie from the cake pan onto a plate
