I guess the answer here is that the one who runs a server won't be anonymous, unless you use host you server as a tor hidden service or something similar.

I don't think you're much more shielded using Gemini than you'd be using a web browser with an adblocker and Javascript and cookies disabled either. You and the server both still have IP addresses that you both can see. If you want a reasonable likelihood of anonymity between yourself and the server, use Tor hidden services.

Well, as long as the server dosent log your ip you are hidden (from the server owner, becouse your ISP logs everything), so it really depends on who runs the server, unless you are using TOR or a VPN or something like that.
