But this time the person waves their hands. ~bartender stares a little at the unfolding pantomime --- it then dawns on him: paper! The person is asking for pen&paper to write down their order. Paper and Postal Service --- they have a "low pass filter", the time to transfer said paper from sender to recipient is greatly increased, and thus your peace of mind shall be increased accordingly.
