After taking our evening walk with our toddler my wife and I couldn't decide what we wanted for dinner. Nothing sounded good. I decided we would have pancakes for dinner. They were so very very good. My daughter had never had a pancake and greatly enjoyed them (she had one with just earth balance (vegan butter) and one with peanut butter - I used maple syrup). I should eat pancakes for dinner more often...


The recipe I use (we make it vegan w/ the substitutions in parens):


- 1 c - flour

- 1 t - sugar

- 1/4 t - cinnamon

- 2 t - baking powder

- 1/4 t - salt

- 1 c - milk (we use almond)

- 1 T veg oil

- 1 T water

- 1 t vanilla extract

- 2 T butter (we use earth balance)


- Stir dry ingredients together

- Separately stir together wet ingredients

- Pour wet into dry ingredients. Mix, but leave lumps... just enough mixing to not have a lot of dry flour

- Set aside batter. In skillet on med-high heat up the butter, once melted pour into batter and stir until just mixed

- Ladle batter onto heated skillet, flipping when bottom side is done (either when small bubbles appear on top, or edges dry out, or looking at bottom shows it light brown)

- Cook second side

- EAT
