smoothie by neil - 2021-06-29


everything is pretty much optional: to your taste.


base


mixed berries defrosted from frozen: 160 grams

spinach leaves defrosted from frozen and cooked: 80 grams.

kefir: 100 grams.


spices to taste


ground turmeric

ground ginger

ground black pepper

ground cinnamon

ground holy basil

ground eggshell

lemon juice or apple cider vinegar


usually 1/2 to 1 teaspoon of the spices, a teaspoon of the lemon or vinegar, and a pinch or two of the ground eggshell.


blend all together to the smoothness you want.


serve


creme fraiche: 100 grams

nuts: 20-30 grams.

pumpkin seeds: 10 grams.

fennel seeds: 3 grams.

chicory root extract: 1 teaspoon.


pour the blended smoothie over the creme fraiche, sprinkle the nuts, seeds, and chicory on top. the blend will be a bit sticky with the chicory blended in and this makes washing up afterwards harder: better to sprinkle it on top.


i blend for only one or two seconds but blend to the smoothness that you prefer.


i make my own creme fraiche from double cream; it has a higher fat (energy, fuel) content than shop bought and definitely contains live bacterial cultures.
