Does anyone know if gemini network traffic can be anonymized by passing it through a gateway configured to route traffic through the TOR network? I haven't been able to find any information about this, either in gemini documentation or anything related to TOR. Thanks!

Yes it works quite well and it's no different than setting up a web server with Tor. (By the way, it's Tor not TOR). However most Gemini client are not configured to use proxies and will fail with the torsocks tool. The best Gemini client to use with Tor, imo is Lagrange. It does work with torsocks while amfora and kristall will not.

Well, Tor is more or less a transport layer like HTTP (or more like a proxy server or an in-between solution): it defines how to transfer something rather than what to transfer. It should be possible to transfer Gemini over it, but I don't think any projects like that are already available.
