Knedla (steamed dumpling for goulash)

Ingredients


500g AP flour

0.25L milk

1 egg

1 packet yeast

1tsp sugar

"a few" tsp salt

old French bread [optional]


Steps


Heat small amount of milk for 10 seconds in microwave to lukewarm. Add 1tsp sugar and yeast. Whisk and let sit 10 minutes to activate yeast.


Combine flour, egg, few dashes of salt, yeast mixture, and rest of milk (room temp). Stir together, knead for 10 minmutes. Dough should be smooth and non-sticky. Add flour to decrease stickiness.


[Optional] Break a piece or two of old break into small cubes and mix into dough.


Cover with cloth and let sit for 2 hours to rise.


Dust wooden board with flour and form into two loaves. (Loaves will double in size while cooking.)


Cover with cloth and let sit for another 20 minutes.


Steam the loaves for 18 minutes. (Ideally in a strainer basket pasta pot if you have one; floating in boiling water if you don't.)


Poke with fork to let out steam; slice with cooking twine.
