I like a good cheese sandwich. It's probably the thing I would miss most if I went vegan. Here I'll outline what I want from a cheese sandwich.
Brown wholemeal is preferred. You don't want holes, which can be a problem for some sourdoughs, and it should be solid enough that you can cut relatively thin slices without it being too dense. Sometimes toasting the bread very slightly gives it a nice extra crunch.
I tend to not use butter. Instead I have pickle and occasionally mustard too.
Standard cheddar is my default, but I don't think the type of cheese matters too much. I would say soft cheeses don't work as well in a sandwich though. Thin slices are best. If you're vegetarian, make sure your cheese is too!
The salad is the most important part of the sandwich. There should be a lot of it. Lettuce, cucumber, tomato, grated carrot, or any other salady stuff you have on hand. A little bit of each in layers is the best.
