If you're interested in yuru camp may I suggest some of my favourite slice of life anime: hidamari sketch, tamayura, gochiusa and sketchbook full colors. Warning these may not be too deep in the "show about nothing" level for beginners.

Toradora is very sweet, I highly recommend it if you enjoy cute romantic plots. Elfen Lied is quite beautiful and sad, and has an impressive intro and OST.
If you want something older and cheesier, Vampire Princess Miyu is fun.
For one-shots I have to recommend:
Wolf Children
Into the Forest of Firefly Lights (😭)
Genmu Senki Leda (very old, I think it's on archive.org)
Gude Crest (same as above)
Also, Angel's Egg if you're interested in a more abstract art piece by Mamoru Oshii from long before his Ghost in the Shell days.
