By far the longest and oldest game I've played is the transport tycoon game, now available for free as OpenTTD. 20 years of gameplay and even now, every once in a while, I binge on it. Chris Sawyer rocks!

I like OpenTTD! Its one of the few graphical games that actually run well on my Raspberry PI 4. But I only dabble, no min-maxing :)

I like openTTD also. But a similar game that I enjoyed even more back in the day was Roller Coaster Tycoon. A huge lesson in building a business with all the problems that come up like employees goofing off, not enough mainenance hired to keep stuff running, Etc. Even down to not having enough trash cans out. You can even cause yourself problems by making a ride too fast and aggressive making everyone who rides it sick. It all adds up to negatives for your park. I haven't tried it yet but they have an open source remake for Linux.
