If you have time for one book, definitely read "The Keep". It's really amazing, and cinematic - I felt like there was a movie playing in my head as I read it...

Most of the rest of her books are deeply intertwined and should probably be read in the correct order. If you do go on this ride, you will find some amazing for the time predictions about the Internet, some of which are possibly yet to come. It's just great work in so many ways.
