recipe for what I'll call breadish.

This is a flat-bread-like thing that has a consistency similar to something

between pancakes (european, that is), crumpets, and tortillas.


ingredients:


(by volume)

1 part oil (I've tried it with sunflower, but olive should work just as well)

2 parts wheat flakes (for volume and texture. Oats, or other unsweetenned cereal-type grains should also work)

3 parts water

4 parts white flour

yeast (I recommend about 1/2 tsp for every two mugs of flour)


preparation


Add the wheat flakes to a bowl.

Add two-thirds of the water, and half the flour.

Add yeast to rest of water, and mix.

Add oil to bowl, and mix. when it's all mixed, it should be a very thick batter,

or a very runny dough.

Add yeast mixture to bowl and mix.

It should now be almost the consistency of a thick pancake batter.

Mix in the rest of the flour.

Leave to rest for an hour or so, should be a little bit bubbly on the surface.

Heat a frying pan with a little oil.

Put a spoonful of the mixture in the pan, and spread it out a bit.

Don't worry if it initially sticks to the pan or the spoon:

the dough will free itself pretty quickly.

You can put multiple such blobs to cook at the same time, as long as they don't touch.

Flip the blobs once the edges are slightly browned, or when it will maintain

structural integrity at the base when poked with a spatula, and cook until done

(to taste).

Eat when warm. The interior might be a bit gooey, depending on how long you

cooked it. This shouldn't be an issue, as the ingredients are usually safe when

raw.
